Vegetable-Infused Cheesy Bread Rolls

It was 2 PM, and I was starting to panic about dinner. Once again, I hadn't planned anything, and it seemed like the kids would be having toast, tuna, and scrambled eggs—another typical evening in our family of five. With both parents working full-time, high-demand jobs, that’s just how we roll! (No pun intended :-) )

Lots of potatoes and sweet potatoes

So I went to ChatGPT and typed in the following:

I have eggs, flour, yeast, potatoes, sweet potatoes, onions, carrots, spices, milk, celery, grated mozzarella. Is there any dinner dish with some or all of the ingredients which you can help me come up with (in form of a recipe) which would please children that are picky eaters?

The first option seemed fine, but my picky little guy wouldn’t go for it. I knew it wouldn’t work.

Being a woman of few words, I refined my prompt in a super efficient way:

something else

ChatGPT wasted no time, and created a new recipe:

OK, This is better. But knowing my little guy, he would never try anything with oozing veggie juice :-D

So I did some fine tuning:

I think grinding vegetables to be a part of the bread rolls would work better than stuffing them. Ideas for recipes where the dough itself contains the veggies? (some or all)

Now we're getting somewhere!

Lastly, I felt that the cheese on top of the rolls would probably cause the buns to turn brown before being ready, so I asked if I could instead the cheese could be added inside the bread.

can I mix the cheese in the dough after it rose?
Yes, you can mix the cheese into the dough after it has risen. This will distribute the cheese throughout the bread, giving the rolls a cheesy flavor in every bite. Here's how you can do it:

Here's the final outcome:

Adjustments (please don't ignore)

I made the dish below and it was so awesome!!! I didn't use onion and kept the spicing pretty bland (salt only LOL). I also squeezed a lot of the juice out of the veggies, and finally, added almost 1 cup of flour, until the dough was elastic and not sticky. I also sprinkled with sesame seeds. After they were done, I brushed them with melted butter for a super soft crust.

Vegetable-Infused Cheesy Bread Rolls

Ingredients:

  • 2 cups flour

  • 1 packet yeast (2 1/4 teaspoons)

  • 3/4 cup warm milk

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • 2 tablespoons butter, melted

  • 1 small potato, peeled and finely grated

  • 1 small sweet potato, peeled and finely grated

  • 1 carrot, peeled and finely grated

  • 1 small onion, finely grated

  • 1 stalk of celery, finely grated

  • 1 cup grated mozzarella cheese

  • Salt and pepper to taste

  • Your choice of spices (e.g., garlic powder, paprika, thyme)

  • 1 egg (for egg wash, optional)

Instructions:

  1. Prepare the Vegetables:

  • Finely grate the potato, sweet potato, carrot, onion, and celery. You can use a food processor to make this easier.

  1. Prepare the Dough:

  • In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.

  • Add the grated vegetables to the yeast mixture. Mix well to combine.

  • Add the flour, salt, and melted butter to the mixture. Mix until a dough forms. If the dough is too wet due to the moisture from the vegetables, gradually add more flour until it reaches a workable consistency.

  • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. The dough will have a slightly different texture due to the vegetables but should still be pliable.

  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  1. Incorporate the Cheese:

  • Punch down the risen dough.

  • Add the grated mozzarella cheese to the dough and knead gently until the cheese is evenly distributed throughout the dough.

  1. Shape the Rolls:

  • Preheat the oven to 375°F (190°C).

  • Divide the dough into 8-10 equal portions.

  • Roll each portion into a ball and place on a baking sheet lined with parchment paper.

  1. Optional Egg Wash:

  • If desired, brush the tops of the rolls with a beaten egg for a shiny finish.

  1. Bake the Rolls:

  • Bake in the preheated oven for 15-20 minutes or until the rolls are golden brown and the cheese is bubbly and slightly browned.

  1. Serve:

  • Allow the rolls to cool slightly before serving.

  • Serve warm as a delightful and nutritious dinner option.

Tips:

  • You can adjust the amount of cheese according to your preference. For a cheesier flavor, add more cheese.

  • These rolls can be served with a side of soup or a dipping sauce that kids enjoy.

These Vegetable-Infused Cheesy Bread Rolls are perfect for sneaking in some veggies while making the meal tasty and appealing to children!
