Quick & Easy Bean Stuffing for Tortillas

Ingredients:

  • 500 g cooked beans (any variety)

  • 1 onion, finely chopped

  • 1 yellow bell pepper, diced

  • 2 cloves garlic, minced (optional)

  • 1 tsp cumin

  • 1 tsp smoked paprika (or regular paprika)

  • ½ tsp chili powder (optional)

  • Salt & pepper to taste

  • 1 tbsp butter or olive oil

  • ¼ cup water or broth (if needed) Tortilla recipe can be found here

Instructions:

  1. Heat butter or oil in a pan over medium heat.

  2. Sauté the onion for 3-4 minutes until soft. Add garlic if using.

  3. Stir in the diced bell pepper and cook for another 3 minutes.

  4. Add the cooked beans and mash slightly with a fork.

  5. Season with cumin, paprika, chili powder, salt, and pepper.

  6. Add a splash of water or broth if needed for a creamier texture. Cook for 2-3 more minutes.

  7. Taste and adjust seasoning as needed. Serve warm in tortillas with your favorite toppings.

Storage Instructions:
