Healthy Power Greens Tuna Salad

Ingredients

  • 3 cups kale and baby spinach, mixed

  • 1 can tuna (preferably in oil; drain excess oil)

  • 3 tbsp black pitted olives

  • 2 oz queso panela or feta, crumbled or diced

  • 1 whole avocado, diced

  • 1/4 cup pickled beetroot, sliced or chopped

  • Salt and pepper, to taste

  • Optional: a drizzle of olive oil (only if using tuna in water)


Instructions

  1. In a large bowl, combine the kale and baby spinach.

  2. Add the tuna, olives, cheese, avocado, and pickled beetroot.

  3. Season with salt and pepper to your liking. If your tuna was packed in water, add a little olive oil.

  4. Gently toss everything together until evenly mixed.

  5. Serve immediately.

Storage Instructions

This salad is best eaten fresh. However, you can prep all ingredients ahead (except avocado) and store in an airtight container in the fridge for up to 2 days. Add avocado just before serving to prevent browning.
