Melt-in-Your-Mouth Tahini Cookies

Ingredients:

  • 1/2 cup (120g) tahini (well-stirred)

  • 1/2 cup (115g) unsalted butter, softened

  • 1/2 cup (60g) powdered sugar (plus more for dusting)

  • 1 tsp vanilla extract

  • 1 1/4 cups (155g) all-purpose flour

  • Pinch of salt


Instructions:

  1. Cream butter, tahini, and sugar In a mixing bowl, beat together softened butter and tahini until creamy. Add powdered sugar and vanilla extract, and beat until fluffy and pale.

  2. Incorporate dry ingredients Add the flour and salt. Mix just until a soft dough forms—do not overmix.

  3. Chill the dough Cover and refrigerate the dough for 30 minutes. This makes shaping easier and helps the cookies hold their form.

  4. Preheat oven Preheat your oven to 160°C (325°F) and line a baking tray with parchment paper.

  5. Shape the cookies Scoop out 1-tablespoon portions of dough, roll them into balls, and place them on the tray. Gently flatten each one with your fingers or the back of a fork.

  6. Bake Bake for 12–15 minutes, or until the edges are just beginning to turn golden. They should remain pale and soft in the center.

  7. Cool and dust Let the cookies cool completely on the baking tray. Once cooled, generously dust them with powdered sugar for the ultimate melt-in-your-mouth finish.
